Why? Choosing skinless thigh over skin-on: chicken skin is almost pure fat, adding 100+ kcal a serving — take it off and the thigh still stays juicier and more tender than breast.Tip: Five minutes of marinating is plenty — no need to wait long.
Next up:Heat 1 tsp oil in a non-stick pan and sauté the remaining garlic, ginger, onion and chili over medium heat for ~2 min.

Why? The original deep-fries the chicken first, adding 200+ kcal a serving. We skip the fry and use just 1 tsp oil to bloom the aromatics for a flavour base — less oil, no loss of fragrance.Tip: Onion is sweetest when translucent and soft — don't let it char and turn bitter.
Next up:Add the chicken and stir-fry over medium heat for 4 min until the surface turns opaque, then add the kicap manis, dark soy, sugar and 4 tbsp water.

Add the chicken and stir-fry over medium heat for 4 min until the surface turns opaque, then add the kicap manis, dark soy, sugar and 4 tbsp water.
Why? Kicap manis is this dish's sugar villain — 57 g of sugar per 100 g, so a free pour blows the budget. Measuring it to 1 tbsp is enough to colour and sweeten; flavour stays, calories stay in check.Watch out: Kicap manis is high in sugar — keep stirring once it's in, as it catches and scorches to bitterness quickly.04:00Next up:Lower the heat and simmer 5 min until the sauce thickens and glazes the chicken, then turn off.
Lower the heat and simmer 5 min until the sauce thickens and glazes the chicken, then turn off.
Why? A gentle simmer lets the sauce reduce naturally so the savoury-sweet flavour soaks in — no cornstarch slurry needed, saving those extra empty calories.Tip: Serve with half a bowl of brown rice and a side of blanched greens — the glaze is perfect over rice.
