  1. Cut the chicken into large chunks and rub with the yogurt, curry powder, turmeric and a pinch of salt; let it marinate 10 min while you prep. Rinse and drain the basmati.

    Why? The lactic acid in yogurt loosens the muscle fibres of lean breast so it turns tender instead of dry — and it replaces the batter-and-fry step that soaks up oil.

    Tip: Soak the basmati 10 min then drain — the grains cook up fluffier and separate.
